Spring Rolls with Peanut Sauce

Makes 6-8 rolls.

The Rolls:

  • Large size Rice Paper Sheets

  • Meat, can be any flavored Shrimp, Pork Belly, Etc.

  • Leafy Green Lettuce, cut in pieces

  • Green Onion, sliced in long strips

  • Rice Noodles, cooked

  • Cucumber, sliced in strips

  • Cilantro, cut

The Peanut Sauce:

  • 1/2 Cup of Peanut Butter

  • 2 Tbsp Low Sodium Soy Sauce, can use Tamari or Coconut Aminos for Gluten Free

  • 1/2 Tbsp Rice Vinegar

  • 1.5 Tbsp Brown Sugar

  • 1/4 tsp Chili oil

  • 1 tsp Garlic Oil

  • 1 Tsp Sesame Oil

  • 1 Tbsp Fresh Lime Juice

  • 2 - 8 Tbsp of water


INSTRUCTIONS

  1. Mix all the ingredients for the Peanut Sauce except the water until well incorporated together. Add water 1Tbsp at a time until the consistency is slightly runny but not too liquid-y where it would drip when dipped.

  2. Dip your Rice Paper sheets in warm water for about 5 seconds and assemble on top of a moist wooden cutting board. Place as many of the ingredients as you wish.

  3. Serve with the dipping sauce. Bye!

NOTES

You can add any combination of meat and veggies inside the roll.
